Quinoa is a grain from the Andes Mountains, valued in cooking for being versatile, quick to prepare and mild in flavor. It works as a base for salads, soups and sides, taking the same place as rice or couscous in recipes, with a light, slightly crunchy texture.

Characteristics

Quinoa is a small, round grain, sold in white, red and black, besides the three-color blend. White is the softest and most delicate in flavor; red and black hold shape and firmness once cooked, which makes them good for salads. The grain is coated with a natural bitter-tasting substance, so rinsing under running water before cooking is recommended. Cooked in salted water, quinoa is ready in a few minutes and yields well, tripling in volume. Once done, fluff with a fork to keep it light.

Uses in the kitchen

  • Cold salads: a base for salads with vegetables, mango, roasted squash and greens, dressed with olive oil and lemon.
  • Soups and broths: added to vegetable soups to give body and substance to the dish.
  • Hot side: served in place of rice, with sautés, meats and roasted vegetables.
  • Baked dishes: mixed with vegetables like squash and eggplant in oven trays.
  • Breakfast: cooked in milk or plant drink, served as porridge with fruit and honey.

Substitutions

In most recipes, brown rice, Moroccan couscous and bulgur wheat replace quinoa well as a salad and side base, adjusting cooking time. In soups, barley or rice give similar body. For gluten-free dishes, corn and rice are safe alternatives, since quinoa is also naturally gluten-free, but check the label for cross-contamination risk in packaging.

Fun facts

Quinoa has been grown in the high Andes for thousands of years and was a staple of Andean peoples. Each color has a slightly different texture, so many cooks mix all three to make salads prettier and more interesting. A practical tip is toasting the dry grain in the pan for a minute or two before adding water, which enhances flavor and leaves the grains fluffier.
