Linguiça is a sausage made of ground or chopped meat — most commonly pork, sometimes mixed with beef or chicken — well seasoned and stuffed into natural or artificial casing. It is one of the most versatile ingredients in Brazilian cooking, from the Sunday barbecue to feijoada, pizzas, soups and farofas.

Characteristics

In Brazil, the most common types are calabresa, toscana, portuguesa and paio, plus chicken and spicy versions. They range from fresh sausages, which need full cooking, to cured or smoked ones, firmer and stronger in flavor. The fat marbled through the meat is an essential part of the flavor and juiciness: it keeps the sausage moist and perfumes the dish. Typical seasoning includes garlic, pepper, paprika and, in toscana, fennel.

Uses in the kitchen

Linguiça shows up in feijoadas, soups, feijão tropeiro, arroz carreteiro and dobradinha, where it cooks with the beans and seasons the whole pot. Sliced into rounds, it enriches pizzas, stuffed breads, farofas and sautés. Whole or in links, it goes on the grill, the griddle and the skillet, and crumbled toscana becomes a filling for polenta, pasta and escondidinhos, like the ragu served over creamy polenta.

Substitutions

In most recipes, calabresa, toscana and paio can replace one another, adjusting salt and fat. Chicken or turkey sausage is a leaner alternative for sautés and fillings. In dishes like feijoada and soups, bacon, smoked pork ribs or loin play a similar role, adding smoky flavor. For meat-free versions, there are plant-based sausages made with soy or pea protein.

Fun facts

Linguiça came to Brazil with the Portuguese tradition of cured sausages and adapted to local seasonings, gaining its own versions in each region. Practical tip: for less-greasy pan-frying, boil the slices for a few minutes and discard the water before browning. When buying, choose firm pieces with vivid color and no excess liquid in the package, and keep refrigerated until cooking.
