Ingredients Needed
To make a delicious sausage bread, you will need the following ingredients:
-
Dough:
-
4 cups (500 g) all-purpose flour
-
2 teaspoons (10 g) salt
-
2 teaspoons (10 g) sugar
-
2 1/4 teaspoons (10 g, 1 packet) active dry yeast
-
1 1/4 cups (300 ml) warm water
-
2 tablespoons olive oil
-
Filling:
-
10.5 oz (300 g) calabresa sausage (Brazilian cured pork sausage)
-
1 medium onion, chopped
-
2 garlic cloves, minced
-
1 small green bell pepper, chopped
-
1 small red bell pepper, chopped
-
Chopped fresh green herbs (parsley and scallions) to taste
-
1 cup shredded (100 g) mozzarella cheese
-
2 tablespoons olive oil
Preparing the Dough
The first step to prepare the sausage bread recipe is to make the dough itself with the following steps:
- Sift the flour: This ensures the dough turns out lighter and lump-free. Set aside.
- Activate the yeast: In a small bowl, mix the active dry yeast with the sugar and a little warm water. Let rest for about 10 minutes until foam forms.
- Combine the dry ingredients: In a large bowl, mix the sifted flour with the salt.
- Add the liquids: Make a well in the center of the dry mixture and add the activated yeast, the olive oil and the remaining warm water little by little. Mix well until a smooth dough forms.
- Knead the dough: On a floured surface, knead the dough for about 10 minutes until smooth and elastic.
- Let the dough rest: Place the dough in a bowl greased with olive oil, cover with a damp cloth and let rest for approximately 1 hour or until doubled in size.
Filling and Assembly
With the dough ready, it is time to prepare the filling and assemble the bread.
-
Prepare the filling:
-
Remove the casing from the sausages and chop into small pieces.
-
In the same pan, add the onion, garlic and bell peppers and saute until golden.
-
Add the chopped sausage and keep sauteing until well cooked.
-
Finish with fresh green herbs to taste and let the filling cool.
-
Roll out the dough: On a floured surface, roll out the dough with a rolling pin into a rectangle about 0.4 in (1 cm) thick.
-
Spread the filling: Spread the filling evenly over the dough, leaving the edges free.
-
Add the cheese: Sprinkle the shredded mozzarella cheese over the filling.
-
Roll up the dough: Starting from the longer side of the rectangle, roll up the dough carefully like a roulade.
-
Seal the edges: Press the ends of the roll firmly to seal the dough and keep the filling from escaping during baking.
-
Cut the bread: With a sharp knife, cut the stuffed dough roll into slices about 0.8 in (2 cm) thick.
-
Arrange in the pan: Arrange the slices in a pan greased with olive oil, leaving space between them so they can rise.
Baking the Bread
The last step is to bake the sausage bread in the oven:
- Preheat the oven: Turn on the oven and set the temperature to 350°F (180°C).
- Let the dough rise again: Cover the pan with the sausage bread slices with a damp cloth and let rest for another 30 minutes so they rise a little more.
- Bake the bread: Place in the preheated oven and bake for approximately 25-30 minutes or until golden and well baked.
- Check for doneness: To make sure the bread is well baked, check that the base of the slices is firm and golden.
Your sausage bread is ready to serve! Enjoy!
