Glossário Culinário
Milk pudding is a creamy dessert baked in a water bath, made with milk, eggs and sugar and covered with caramel sauce. The most beloved version in Brazil uses sweetened condensed milk, which gives a smooth texture and the unmistakable flavor of family gatherings.
The classic milk pudding has a firm yet delicate texture, slicing cleanly and melting in the mouth. The caramel sauce coats the dessert and forms that signature golden shine once unmolded.
Milk pudding is the go-to dessert for Sunday lunches, birthday parties and holiday dinners. It shows up in individual cups and in large molds for sharing. It also works as a base for reinterpretations with chocolate, coconut, coffee or fruit, keeping the same method.
The best-known variations are condensed milk pudding, bakery pudding, made with bread and a more rustic texture, chocolate pudding, coconut manjar blanco and flan, its close European cousin. There are also lactose-free versions and adaptations baked in the air fryer in small molds.
The debate between pudding with or without holes divides families: the smooth one comes from a lower oven and a well-strained batter, while the holes appear with higher heat and incorporated air. Another classic trick is caramelizing the mold with pure melted sugar, without water, for a more intense sauce. The pudding needs to chill for a few hours before unmolding, or it may crack coming out of the mold.
