Glossário Culinário
Galinhada is a one-pot dish in which pieces of chicken or free-range hen are cooked together with rice in the same seasoned broth. The rice absorbs the flavor of the chicken and the seasonings, resulting in a complete, moist and highly aromatic meal.
Preparation starts by browning the chicken pieces with seasonings such as garlic, onion, turmeric (açafrão) and cheiro-verde (parsley and green onions). Next, the raw rice is added to the pot and cooked in the broth that forms, sometimes with added hot water. Regional ingredients such as pequi (native Brazilian fruit), sweet corn and bell peppers appear frequently. The ideal doneness is rice that is tender and slightly creamy, still with broth, neither mushy nor too dry.
Galinhada is food for family gatherings, June festivals and Sunday lunch in the countryside, since it yields well and feeds many people with few ingredients. As a single-dish meal, it needs no elaborate sides: a salad, a farofa or a vinagrete (Brazilian pico de gallo) is enough. It is also practical for lunch boxes, as it keeps its flavor well after reheating.
Galinhada has roots in caipira and tropeiro (cattle-driver) cooking, when hearty meals had to be cooked with a single pot on a wood stove. Each region adapted the recipe to local ingredients, which is why there are so many versions across the country, all united by the same logic: chicken and rice cooked together.
