Beef is cattle meat from steers and cows, the most traditional choice for barbecues, roasts, and everyday Brazilian dishes. With bold flavor and a texture that varies widely by cut, it works both for a quick grilled steak and for a slow-simmered pot stew that cooks for hours. It is a source of protein and iron, and its versatility explains its constant presence in rice and beans, weekend barbecues, and family gatherings.

Characteristics

Each cut has its own profile: tenderloin, top sirloin and striploin are tender and ideal for grills and steaks; chuck, shank, shoulder and short ribs have more collagen and need slow cooking, melting into stews; eye of round and top round are lean and good for grinding; hump and flank shine at the barbecue. Marbling, the fat flecked through the meat, makes the cut juicier and tastier.

Kitchen uses

On the grill and in the skillet, steaks, medallions, and hamburgers need high heat and fast cooking. In the pot, stews, pot roast, vaca atolada, and boiled beef dishes need time and liquid. Ground, it becomes meatballs, Bolognese, escondidinho, and fillings. Roasted whole, cuts like hump and rump cap feed a crowd. It pairs with garlic, onion, bay leaf, thyme, rosemary, mustard, soy sauce, stout, and wine in marinades and sauces.

Substitutions

Within beef itself, you can swap cuts with the same role: eye of round for top round for grinding, chuck for shoulder in stews, flank for skirt steak at the barbecue. For more economical recipes, pork such as leg and spareribs can take over stews and roasts with a different flavor. In ground dishes and fillings, ground chicken or plant proteins such as lentils and soy work when you want variety.

Trivia

After grilling, letting beef rest a few minutes before slicing keeps the juices inside instead of running out onto the board. Slicing against the grain leaves each slice more tender to bite. Taking the meat out of the fridge a while before cooking helps it cook evenly. And coarse salt suits barbecue, while fine salt or seasonings work better on skillet steaks.
