Cuca cake

Cuca: German-born cake with fruit and crumb topping, star of southern Brazil's colonial cafés.

Cuca is a German-born cake hugely popular in southern Brazil, made with soft yeast or plain cake batter, filled or topped with fruit and finished with a crisp butter, sugar, and flour crumble. Banana is the best-known version.

Characteristics

Cuca combines three textures: fluffy batter, soft fruit, and the crisp streusel topping. The crumb topping is made by rubbing cold butter with sugar, flour, and cinnamon into lumps that brown in the oven. Banana, apple, grapes, and guava paste are the most common fillings. It is baked in rectangular pans and served in squares, warm or at room temperature.

Uses in the kitchen

Cuca is the cake of the colonial café and the afternoon snack in southern homes, alongside brewed coffee or chimarrão. It also shows up at church fairs and markets, sold in generous slices. Because it uses seasonal fruit, it is a good way to use up ripe bananas and apples.

Fun facts

Cuca arrived in Brazil with German immigrants in the South, and the name comes from the German Kuchen, meaning cake. Over time the recipe was Brazilianized with tropical fruit like banana, and today it symbolizes the colonial tables of Rio Grande do Sul and Santa Catarina, found in rural cafés and food-tourism routes.
