Breadcrumbs

Breadcrumbs: toasted ground bread that coats, gratins and adds crunch to Milanese, Parmesan and croquettes.

Breadcrumbs are made from toasted bread ground into a coarse, dry flour, beige to golden in color. Their main job is to create a crispy crust on breaded foods, absorb moisture from fillings and gratinate oven dishes, making them essential in Milanese cutlets, Parmesan bakes, croquettes and meatballs.

Characteristics

They have irregular, dry crumbs that brown quickly in contact with hot fat. The homemade version, made with stale bread toasted in the oven and crushed, tends to be more rustic and flavorful. The store-bought kind is finer and more uniform, practical and long-keeping. Good breadcrumbs are well dried, with no rancid smell, and stored in a sealed jar in a cool, dry place. If they soften with humidity, just warm them in a low oven for a few minutes to bring back the crunch.

Substitutions

Freshly grated bread, crushed toast and panko swap well, with panko lighter and crunchier. For a gluten-free version, use rice flour with cornmeal, fine cassava flour or blends made for breading, adjusting frying time. Crushed cornflakes and fine rolled oats also coat, each with its own texture. In fillings, oats, cassava flour or mashed potato help bind when breadcrumbs are missing.

Fun facts

Dredging food in the sequence wheat flour, beaten egg and breadcrumbs makes the crust stick better and shed less in frying. Pressing the coating lightly and resting it a few minutes in the fridge before frying leaves a firmer crust. Oil at the right temperature sears fast: too cool it soaks, too hot it burns the crumbs before the inside cooks.
