Sonho (Brazilian Bakery Dream)

Brazilian bakery dream: fluffy fried dough with creamy filling. See traits, fillings, variations and tips.

The bakery dream (sonho de padaria) is a fried sweet with soft, airy dough, filled with cream and dusted with sugar. A classic of Brazilian bakery displays, it marks breakfast and afternoon snacks: a golden crust outside, a fluffy crumb inside, and a creamy vanilla, chocolate, or dulce de leche filling contrasting with the warm dough.

Characteristics

The dough uses wheat flour, milk, eggs, sugar, butter, and active dry yeast. It is kneaded until smooth, rested to rise, and shaped into balls, which proof again before frying. The ideal is to brown in medium-temperature oil: too hot, it burns outside and stays raw inside; too cool, it soaks up oil. Sugar is dusted while still warm, and the filling goes in after frying, with a piping bag.

Uses in the kitchen

The sonho is a counter sweet: fried fresh, filled, and served warm the same day. The most requested fillings are vanilla cream, dulce de leche, chocolate, and creamy guava paste. It goes with black coffee, coffee with milk, or hot chocolate. At parties, it appears in a mini version, assembled close to serving time so it does not go soggy.

Variations

There is baked sonho, a lighter oven-made version, and regional fillings like creamy coconut. Outside Brazil, its close relatives are the German Berliner, filled with jam, the Portuguese bola de Berlim, and the American donut, with similar dough, topping, and a center hole.

Fun facts

The name lives up to the texture: well-proofed dough turns so light it seems to melt in the mouth. Being fried, sonho loses its charm from one day to the next, so bakeries usually fry in batches throughout the day and fill only at sale time, keeping the contrast between the soft dough and the fresh cream.
