The bobó is a rich, full-bodied cream from Bahia’s cuisine made with blended cassava, coconut milk, dendê palm oil and shrimp or fish. Velvety in texture and golden in color, it is served with white rice and carries the mark of African influence on Brazilian cooking.

Characteristics

Bobó starts with cooked cassava processed until it becomes a smooth purée, which thickens the broth naturally. Coconut milk adds mellowness, dendê brings its signature color and flavor, and the seafood rounds out the dish with protein and juiciness.

  • Base: cooked cassava blended until it forms a smooth cream.
  • Flavor: coconut, dendê, bell peppers, tomato, onion and cilantro.
  • Protein: shrimp in the most famous version; there are versions with fish or chicken.
  • Serving: hot, with white rice and sometimes pirão.

Uses in the kitchen

Bobó is a main course for special lunches and Bahian restaurants, alongside rice and simple salads. It shares the table with close relatives such as vatapá, xinxim and fish pirão, all built on Afro-Brazilian ingredients. At home, it works as a complete one-pot meal, since it brings together carbs, fat and protein in a single pot.

Variations

Variations include shrimp bobó, fish bobó, chicken bobó and vegetarian versions with vegetables or hearts of palm. Those who prefer a milder flavor cut back on the dendê and boost the coconut milk; those who like heat add dedo-de-moça chili pepper. There are rustic versions with chunks of cassava and thin versions, almost a creamy broth.

Fun facts

Bobó was born in Bahia from the encounter between Indigenous cassava and the techniques and seasonings brought by Africans, such as dendê and coconut. The cream’s consistency depends on the cassava: older roots need more liquid to blend. To keep shrimp from turning rubbery, it goes in only at the end of cooking. Cilantro, essential in the original recipe, can be swapped for parsley by those who dislike its strong flavor.
