Gluten

Conceito

Gluten is a protein naturally present in wheat, rye, barley and their derivatives, such as wheat flour, bread, pasta and most cakes and cookies. It gives dough elasticity: in contact with water and under kneading, it forms an elastic network that traps fermentation gases, guaranteeing structure, volume and softness in breads, pizzas and cakes. Understanding gluten is understanding much of home baking and pastry.

Characteristics

Gluten combines elasticity and extensibility: dough stretches without tearing and springs back into shape. It shows up in wheat, rye, barley, malt and bulgur, as well as products such as sauces, breadings and some sausages. Oats often suffer cross-contamination in planting and processing, so anyone needing full safety looks for certified gluten-free oats. People with celiac disease or gluten sensitivity exclude these sources from their diet, always with professional guidance.

Uses in the kitchen

  • Breads and pizzas: kneading well develops the gluten network and guarantees an airy crumb and firm crust.
  • Fresh pasta: elasticity lets you roll the dough thin without breaking.
  • Fluffy cakes: here the care is the opposite — mix only until combined so the cake does not turn heavy.
  • Gluten-free recipes: pies, cakes and breads adapted with alternative flours turn out very well.

Substitutions

  • Wheat flour for blends of rice flour with sweet or sour cassava starch and cornstarch.
  • Breadings for versions based on rice, corn or gluten-free breadcrumbs.
  • Everyday breads for recipes with cassava starch, like cheese bread (pão de queijo), or with cornmeal and tapioca.
  • Regular oats for certified gluten-free oats, when restriction is needed.

Fun facts

  • Minas-style cheese bread and polvilho crackers are naturally gluten-free, as they use cassava starch instead of wheat flour.
  • Tapioca, made only with hydrated cassava gum, also contains no gluten and becomes the base of crepiocas and cakes.
  • Food labeling in Brazil indicates the presence or absence of gluten, making choice easier for those with restrictions.
